Albóndigas (Peruvian Meatballs)

Ingredients

(4 to 6 servings)

  • 1/2 of ground beef
  • 2 slices of sandwich bread
  • 1/2 cup of milk
  • 1 egg
  • 1 onion, chopped
  • 2 cloves of garlic, chopped
  • 1/2 tsp of ground herbs (thyme, oregano)
  • 2 tbsp of margarine
  • 4 tbsp of plain flour
  • 5 tbsp of breadcrumbs
  • 1 tbsp of chopped parsley
  • Salt and pepper to taste
  • Oil as needed

Preparation

To make the albóndigas, mix the meat with the bread (soaked in the milk beforehand and squeezed out), the egg, onion, garlic, herbs, half the margarine, half the breadcrumbs, the chopped parsley, salt and pepper. Mix very well and let the mixture rest for half an hour. Shape into balls the size of a walnut. Roll them in the flour and then the rest of the breadcrumbs. Fry in plenty of oil. Once golden, remove and drain on paper towels.

Serve the albóndigas covered in tomato sauce, with rice or French fries.
