Coca Leaf Bread (Pan de Coca)

Ingredients

(6 servings)

  • 1 kg of plain flour
  • 6 tbsp of sugar
  • 160 g of margarine
  • 15 g of ground coca leaf
  • 1 tbsp of salt
  • 2 cups of coca tea
  • 5 tbsp of fresh yeast
  • 1 ounce of milk
  • 2 eggs

Preparation:

To make this coca leaf bread, first sift the flour, sugar and salt and add the melted margarine and the fresh yeast. Mix well with the milk and eggs.
Add the ground coca, passed through a fine sieve or strainer. Keep mixing until all the dough turns green (from the coca leaves)

Finally, add the coca tea little by little; it is made by putting the leaves in a small pot of boiling water, covered. Wait a few minutes and strain.

Mix vigorously in a bowl and stretch the dough in every direction for about 15 minutes. Let it rest 45 minutes. Shape the rolls, brush with yolks and milk and bake for 30 minutes at medium heat.
