Ingredients

- 1 kg of canary beans, soaked for 24 hours
- 2 kg of tomatoes, peeled and seeded
- 1 piece of bacon
- 1 hen breast
- Cilantro, salt, pepper, cumin
- 1 bottle of oil
- 1 package of smoked pork chops (about 4 pieces)
- 1 red chorizo
Preparation:
Piura-style beans: In a pressure cooker, place a layer of tomato and then one of beans. On top, add the cilantro and the pork chops with chorizo and a little bacon. Cover with beans and add a little oil. Continue this way until the beans are used up, always adding salt and pepper to each layer.
Heat over high heat for 1/4 of an hour and then over low heat until cooked; about an hour and a half in total.
Pour the beans into an ovenproof dish, cover them with the hen and place part of the remaining bacon on top. Bake at 300 °F for 1/4 of an hour. Serve mixed with pieces of bacon.
