Ingredients
(4 – 6 servings)
- 2 tbsp of ají mirasol paste
- Oil as needed
- 1 large onion
- 1 sprig of huacatay
- 10 cooked shrimp tails
- 8 walnuts
- 150 g of fresh cheese
- 1/4 cup of evaporated milk
- Salt to taste
- 3 hard-boiled eggs
- 6 potatoes, boiled and peeled
- 6 botija olives
- Lettuce
Preparation:
To make shrimp ocopa, heat the oil and fry the onion, cut into large pieces, until golden. Remove from the heat and blend with the ají paste, the leaves, shrimp, walnuts, fresh cheese, milk and salt until you have a creamy sauce. Place the potatoes on a platter with the hard-boiled eggs cut in half and cover with the sauce. If you like, garnish with shrimp, olives and lettuce.
